Perhaps the best part about Easter is the fact that, even after the day is over, there's usually still a lot of candy left. Jelly beans, gummy bears, Cadbury eggs, peanut butter cups, marshmallow peeps — there's no end to the sugary goodness in your awesome Easter basket. Yet as much as I love stuffing my face with brightly colored candies, it's easy to get sick of them halfway through the basket.
Is there anything more emblematic of Easter than marshmallow peeps? And yet, despite their popularity...does anyone actually like eating them?
You only need eggs and bananas to make these tasty pancakes that fit almost every hyphenated category: dairy-free, Paleo-friendly, grain-free, gluten-free, low-carb, and high-protein. It sounds too good be true, but these pancakes are easier to make than traditional pancakes and don't have any of that troublesome white flour.
